All of our wines are vinified and aged without sulphites.
A minimal dose of sulphur is added around April/May when bottling occurs.

On the nose this white Saumur “Orée des Bois” has notes of white flowers and ripe, white fruit with hints of dried herbs. The grapes having been picked at perfect ripeness give a candied fruit quality on the palate..
In the mouth the expression and power of Chenin shows remarkable personality. Up front it is direct with mouth-watering crisp fruit and vanilla notes rounded off by an attractive minerality.
As it ages iodised notes evolve and this wine develops a round mouth-feel bursting with charm and class.

Age of vines: 30-45 years.
Soil type: This wine is the produce of an exceptional calcareous clay vineyard, on a hillside surrounded by the dry stone walls of a former prison. This cuvée gets its name from the nearby wood which bestows a delicate coolness on the vineyard.
Yield: 45hl/ha
Production: 1000 bottles/year
Harvest: Hand-harvested
Vinification: Light pressing followed by fermentation at 18°c. 9 months barrel-ageing.
Food pairing: Salmon tartare, scallop and savoy cabbage gratin, chicken fricassée with crayfish, foie gras, goats cheese.
